Modify/Remove fields in Ink Appointment pluggin

Hi there
Is it possible to remove the field 'service price' and modify the select service field to add options in the Ink Appointment plugin? I'd also like to modify the text on the submit button

I would like to do a similar action. The first section with name, email & phone is fine. Then need 2 sections:

1) Select Start Date
Service: ____
Date: ___ Time: ___
Location: _____
(remove price)

2) Select End Date
Date: ___ Time: ___
Location: _____
(no price)
Instead of "Book Appointment" want it to say "Request Quote"

This is for a shipping service. We need to know the customer's start date, time & location, then end date, time & location. We can't publish prices because it varies. When customers submit the booking form we want instant notification via email. Then we will call/email them with a price.
